- 4 cups Cauli Rice (either fresh or frozen)
- 4 Roma Tomatoes (medium, seeded & diced)
- 1/4th diced Onion
- 1 sliced Avocado
- Half cup Cilantro (chopped)
Steps:
- Put the steak in a bowl, and top it with 1 tbsp avocado/olive oil, lime juice, and taco seasoning.
- Take the other 1 tbsp oil and put it in a large skillet over medium-high heat until it’s glistening.
- Now add the steak in a single layer and cook for a couple of minutes until brown on both sides.
- Take the cauliflower rice and top it with steak, sour cream, and all the remaining veggies.
Nutrition:
Each serving of 1 cup has 4g net carbs and 10g fats.

HOW TO MAKE:
- In a medium bowl, mash the canned salmon with the avocado oil mayo, celery, onion, salt and pepper and dried dill with a fork until salmon is broken up and ingredients are well distributed.
- Lay a sheet of nori on a flat surface and scoop about 1/4 of the salmon mixture over the nori and spread with the back of a spoon over the bottom 3/4 of nori sheet.
- Layer with 1/4 of the sliced avocado.
- Roll up horizontally and if needed seal the edge by dipping fingers in a bit of water. Slice and serve.

Ingredients:
- 4 tbsp butter
- 1 cup almond meal
- 1 tbsp coconut flour
- 4 eggs
- 2 tsp baking powder
- Pinch garlic powder
Method:
- Melt the butter in an ovenproof bowl in the microwave for about 1 minute.
- Add the almond meal, coconut flour, eggs, baking powder and garlic powder, whisking until smooth.
- Divide the batter evenly into four ramekins and microwave for about 1 minute and 30 seconds until springy and firm.
- Run a knife along the ramekin to remove each muffin.
- Split and toast before serving.
